Pineapple and Goji Jam: Here's How to Use It!

Finding a way to use our pineapple and goji jam is very easy: it goes perfectly with all your favorite desserts. But today we want to recommend a truly spectacular recipe: the New York Cheesecake! Its creamy and sweet note is perfect with the genuine and natural taste of pineapple and goji, which makes this dessert truly exceptional!

Ingredients

For the 22cm base:

  • 240g Digestive Biscuits (a very popular biscuit in the UK and the US)
  • 110 g of butter

For the cream:

  • 100 g of fresh cream
  • 65 g of sugar
  • 500 g of fresh spreadable cheese (Philadelphia type)
  • 25 g of cornstarch
  • 1 whole egg
  • 1 egg yolk
  • the juice of half a lemon
  • 1 vanilla pod

Preparation

  1. The first thing to do is melt the butter in a bain-marie, crush the biscuits and mix everything together. Then take a 22 cm cake pan, line the bottom with baking paper and pour about half of the biscuits inside, pressing them with a spoon to cover the empty spaces. Cover the edges well with the other half of the biscuits and put everything in the fridge for half an hour;
  2. Now take care of the cream. In a bowl break an egg, add the yolk and the sugar and beat with a whisk until you obtain a cream. Now also add the seeds of half a vanilla bean and the cheese little by little, always beating;
  3. When everything is well incorporated, add the lemon juice and cornstarch, beat for a few more minutes then add the cream. Beat gently to incorporate then pour everything into the base that has rested in the refrigerator;
  4. Now it's time to cook. Cook in a static oven preheated to 160° for an hour and then at 170° for 20 minutes;
  5. Once cooked, let it cool inside the oven with the door open and then finish it with a generous dose of pineapple and goji jam. Enjoy your snack!
