The eggplant tower is a really simple recipe, but it gives great moments of taste every time. And it becomes even more exceptional if instead of using the classic tomato sauce you use our tomato and moringa sauce, a plant rich in beneficial properties and with an exceptional flavor. Here is the recipe!
Ingredients for about 8 turrets
- 2 fairly large aubergines
- 200g mozzarella
- tomato and moringa sauce
- salt, pepper, oil to taste
- Parmesan cheese
Preparation
- First, take the two aubergines, cut them into slices about 1.5 cm thick, sprinkle them with coarse salt and leave the excess water to drain for about twenty minutes;
- After this time, take the aubergine slices, rinse them under water to remove the salt and dry them well with absorbent paper;
- Now roast the aubergine slices on a non-stick pan (without oil) on both sides until they are soft;
- Now it's time to compose the turrets: place a slice of eggplant on the baking tray, cover with the tomato and moringa sauce and a slice of mozzarella. Repeat twice more and finish with the tomato and moringa sauce and a nice sprinkling of grated Parmigiano Reggiano;
- All that's missing is a drizzle of oil and then you can bake at 180° for 20 minutes, or until the mozzarella has melted;
