How many times do you want to have a good aperitif at home and you rely on the usual chips or the usual snacks? With our recipe for aperitif pizzas you will have a valid alternative, simple to make and perfect with both a good craft beer and a good glass of wine.
Ingredients (for about 24 pizzas):
For the dough:
- 500 g of 00 flour
- 10 g of fresh brewer's yeast
- 15 g of salt
- 60 g of extra virgin olive oil
- 12 g of sugar
- 250 gr of water
For the dressing:
- 350 gr of tomato, goji and basil sauce
- 250g mozzarella
- salt, pepper, extra virgin olive oil to taste
Preparation:
- The first thing to do to prepare the aperitif pizzas is to sift the flour into a bowl and add the brewer's yeast dissolved in a little warm water;
- Mix and add the remaining water. When it is well absorbed, add the sugar, salt and oil. Transfer everything onto a well-floured work surface and knead until you obtain a smooth and non-sticky dough;
- Now form a ball and place it in an oiled bowl. Cover well with cling film and let it rise at room temperature for about 3 hours. In the meantime, season the sauce with whatever you like (even simple pepper, salt and extra virgin olive oil is perfect);
- Now take the dough and roll it out with a rolling pin until it reaches about 4 millimeters in thickness; take a pastry cutter and start forming your pizzas, which you will place on an oiled baking tray;
- Now make a well in the center with your fingers and start seasoning: put the tomato in the center and then some diced mozzarella. All that's missing is a drizzle of oil and then you can bake in a static oven at 200° for 15 minutes (for the first 10, place the baking tray on the bottom, while for the last 5 on the highest shelf);
