Occhi di bue biscuits, we can say, are the most well-known and appreciated type of biscuit. They are nothing more than two pieces of shortcrust pastry that enclose a sweet surprise in the center: from jam to Nutella. Why are they so loved? Because in their simplicity, they give moments of true sweetness.
Today we want to recommend them to you with our green apple, peach and goji jam! Let's see the recipe.
Ingredients for about 22 biscuits
- 500 g of butter
- 400 g of icing sugar
- 200 gr of Green apple, peach and goji jam
- 1 vanilla pod
- 1 kg of 00 flour
- 8 egg yolks
Preparation
- First, remove the butter from the refrigerator and leave it at room temperature for about twenty minutes. After this time, transfer the butter cut into pieces into a mixer together with the sifted flour and blend;
- Put everything in a large bowl and add the sifted icing sugar, the seeds of the vanilla bean, the egg yolks and a pinch of salt. Knead everything quickly until you get a smooth and compact dough, form a ball, cover it with cling film and let it rest in the refrigerator for at least half an hour;
- Now take out the pastry and roll it out with a rolling pin on a floured surface. Take a cookie cutter of about 10 cm in diameter (choose the shape you prefer) and form 22 cookies. Work the remaining dough and make another 22 cookies, which you will cut in the center with a smaller cookie cutter;
- Now transfer all the biscuits onto a baking tray lined with baking paper and bake at 180° for 15 minutes, or until they are lightly golden.
- Once ready, let them cool on a rack and proceed to compose them: take a biscuit without the central hole, spread a good amount of green apple, peach and goji jam on it and cover with a “perforated” biscuit.
