Goji Berries and Kids: Here Are Some Little Ideas!

Who said that goji berries are only suitable for adults? All the benefits they bring to our body are also valid for children! The only rule is in the doses: if for an adult the recommended amount is 30g, for children it drops to 3 teaspoons. But let's see what the main benefits are and then we will give you a little recipe that no one will be able to resist.

The benefits of goji berries for children

Needless to say, the benefits of goji berries are the same for everyone. But let's look at them in more detail:

  • carotene and lutein: these two substances are very useful for protecting eyesight, improving and strengthening it;
  • trace elements: very useful for iron metabolism;
  • carbohydrates: Goji berries offer so much energy! That's why they are perfect for breakfast;
  • vitamin C: did you know that goji berries contain more vitamin C than oranges? Awesome;
  • mineral salts: lots of mineral salts, very useful for the health of our organism!
  • fatty acids: Goji berries are very rich in Omega 3 and 6!
  • carotenoids and beta-carotene: powerful antioxidants that fight free radicals and keep cells healthy!

Now that you know all the benefits that goji berries bring to children (and adults too), a recipe suitable for everyone is just right!

Muffins with fresh goji berries and no butter!

Ingredients

  • 200 g of 00 flour
  • 80 g of brown sugar
  • 1 sachet of baking powder
  • 1 lemon
  • 150 g of ricotta
  • 60 g of extra virgin olive oil
  • 60 g of fresh goji berries
  • 2 eggs

Preparation

  1. First, take a bowl and whisk the eggs with the sugar until you get a light and frothy mixture.
  2. At this point, add the ricotta, the oil and work everything with the whisks. After a while, add the sifted flour and yeast and the lemon zest. Add the fresh goji berries only at the end, so you avoid breaking them.
  3. Incorporate the goji berries well into the mixture and then pour into the appropriate moulds.
  4. Bake in a static oven at 180°C for approximately 15/20 minutes (do the toothpick test).
