We really like to experiment and try new things. And this is what came out of it: the pasta with goji berries ! But not just any pasta. We grow goji berries directly on our farm in Calabria and add them to the dough while still fresh.
Since you are new you might be wondering how to eat them…don't worry we'll take care of it with this recipe!
Ingredients for 4 people
- 360g of goji tagliatelle
- 300g of squid
- 400g of scampi
- 400g of prawns
- 500g of mussels
- 500 gr of clams
- 250 g of cherry tomatoes
- 3 cloves of garlic
- 1 glass of dry white wine
- salt, pepper, oil and parsley to taste
Preparation
- The first thing to do to prepare tagliatelle allo scoglio is to clean the fish. Start with the mussels and clams, then move on to the calamari (which you will cut into rounds) and the prawns (which you will have to remove the shell);
- In a pan, heat a drizzle of oil with a clove of garlic, then add the calamari and prawns. Let them brown and blend with half a glass of white wine. Then remove the fish and set aside the cooking juices;
- In another pan, heat the oil with a clove of garlic, add the mussels and clams, cover with the lid and cook until they have all opened. Shell them and set them aside, except for a few that you will use to decorate the finished dish;
- Now take the pan with the cooking liquid from the calamari and prawns, heat it and add the cherry tomatoes cut in half, season everything and leave to cook until a sauce forms;
- Meanwhile, take care of the scampi, which you will brown in a pan with oil and garlic;
- When the sauce is ready, add all the fish (except the scampi) and chopped parsley. In the meantime, cook the tagliatelle, which you will keep al dente and add to the sauce. Let it flavor for 1-2 minutes with the help of a little cooking water and serve with the scampi, a few mussels and a few whole clams and another handful of parsley. Enjoy your meal!
