Goji Peach Juice: Try It With Blueberry Ginger Muffins!

For those who want to try something different than fresh or dried goji berries, the goji juice It is definitely one of the most delicious and refreshing solutions.

Goji juice contains, in fact, in a concentrated form, all the nutritional properties of the wonderful Lycium Barbarum : lots of antioxidants, anti-inflammatories, vitamin C (but also A and B), mineral salts and carotenoids. Our juice, made with only goji berries grown on our company's land, in the heart of the Sibari plain, also sees the addition of the fresh and summery flavour of peaches, for a unique mix of health and benefits . Peaches are a perfect match for goji, as they are rich in vitamins, antioxidants and have very few calories.

But why enjoy nutraceutical goji juice alone when you can combine it with other ingredients perfect for a complete breakfast or a pleasant break? Here's an idea.

Peach and Goji Juice with Blueberry and Ginger Muffins

For this recipe we decided to move away a bit from typical Calabrian products because our peach and goji juice pairs very well with blueberries and ginger! Here is the recipe.

Ingredients for 12 muffins:

  • 240 g of 00 flour
  • 30 g of sugar
  • 1 sachet of yeast
  • 100 g of butter
  • 2 eggs
  • 150 ml of milk
  • 150 g of blueberries
  • 1 tablespoon vanilla essence (or a sachet of vanilla extract)
  • a small piece of ginger root

Procedure:

  1. First sift the flour and yeast into a bowl, then add the sugar.
  2. In another bowl, beat the eggs, warm melted butter, milk, vanilla essence and grated ginger.
  3. Now put the mixture with the eggs into the bowl with the flour and mix well until the mixture is smooth and without lumps.
  4. Now add the blueberries, well washed and dried, and mix gently to incorporate them into the mixture.
  5. Now, using a spoon, start filling the muffin cups halfway.
  6. Place them on a baking tray and bake at 180° for about twenty minutes, until they are golden on the surface (always remember to do the toothpick test).
