The cardoncello mushroom is very common in the Pollino area (Calabria), Basilicata and Puglia. We grow it directly on the farm in a natural way in our photovoltaic greenhouses, so as to have a good product that respects nature.
Cardoncelli Mushrooms in Oil: from the Field to the Jar
The cardoncelli mushrooms of our company are collected and cleaned by hand, one by one. We immerse them for four minutes in a "hot solution" composed of Emilian wine vinegar, salt and water, then we drain them and put them in jars together with spices and extra virgin olive oil "Dolce di Rossano" .
