Made with pine nuts and basil like the famous “Genoese” pesto, this pesto surprises with the addition of other Southern ingredients, such as dried tomatoes and grilled onions, mixed together with all the typical aromatic herbs.

Pesta Rosso: from the field to the jar

Many ingredients means many different processes, all artisanal and made with passion.

The basil, grown and harvested by us, is washed and left to rest in a "cold solution" (water, vinegar and salt) for a few hours. Then we drain it and homogenize it.

The tomatoes are instead slowly dried in the sun, on special red bricks, and then softened with warm water and immersed for a few minutes in a "hot solution" (vinegar, water and salt). Then we drain them, season them and finally chop them finely.

The red onions of Tropea are peeled, washed and left to rest for 12-13 hours in a "cold solution" (water, extra virgin olive oil, vinegar and spices) to lose their pungent character. After that they are drained, grilled in a wood oven and chopped.

Finally, we combine everything together with extra virgin olive oil and herbs, heat to better mix the ingredients and proceed to put our red pesto inside the jars.

Abbinamento consigliato

Excellent to be enjoyed natural on bread and hot croutons or in combination with mature or semi-mature cheeses. Perfect as a sauce for pasta or to enhance sandwiches, boiled meats, roasts and roast beef.
