Caper Flowers in Oil: tasty buds. They grow spontaneously in the area and are picked just a moment before the plant blooms. They are one of the most well-known Calabrian delicacies, and the addition of extra virgin olive oil "Dolce di Rossano" and Calabrian chili pepper makes it all even more memorable and tasty.

Caper flowers are hand-picked from the caper plants that grow wild in the Sibari plain . Only the youngest plants that are already in the flowering phase, but where the bud has not yet blossomed, are sought. The flowers then undergo a long process of de-bittering in order to lose their characteristic bitter aftertaste and become very delicate and tasty instead. Not to be confused with the more famous Cucunci , commonly called capers, from which they differ in appearance, flavor and use.

Caper Flowers in Oil: from the Field to the Jar

The caper flowers are carefully selected by expert hands and eyes , then washed and blanched for a few seconds in boiling water. We then follow the process called "de-bittering" : the caper flower is naturally very bitter so we leave them for 3 days in large tubs of water that we change regularly. Once they have reached a soft and smooth taste, the caper flowers are drained and immersed for a few minutes in a "hot solution" made up of vinegar, salt and water and then, once drained, they are placed in jars together with extra virgin olive oil "Dolce di Rossano" , salt, vinegar, garlic and chilli pepper.
