Calabrian Sundried Tomatoes in Oil: from the Field to the Jar
Our tomatoes are grown with care and attention. When they are at the right ripeness we pick them, wash them, cut them and remove the seeds. Here is the drying moment: we put the tomatoes under the magnificent Calabrian sun for 24 hours, placed on top of the traditional red bricks. This process dries them slowly, even at night thanks to the heat gradually released by the bricks. The following morning we reopen the tomatoes and leave them under the sun for another 36 hours. Once completely dried they are washed in warm water to soften them and then immersed for a few minutes in a "hot solution" (vinegar, salt and water). Drained and pressed they are placed in jars together with "Dolce di Rossano" extra virgin olive oil and our spices.

Enjoy alone as a tasty appetizer or in combination with mature and semi-mature cheeses. Excellent in seasonal vegetable salads, cold pasta or rice salads. Perfect with seafood salads, with tuna in oil or in brine or on warm croutons accompanied by caper flowers.
