Cream of sun-dried tomatoes and grilled eggplants. The “Stuzzico” family brings the flavors of Calabria to the table thanks to an intriguing and tasty mix of chopped vegetables: in the classic version, juicy San Marzano tomatoes meet exquisite eggplants, the fresh taste of mint and the strong character of chili pepper.

Tomato and Eggplant Snack: From the Field to the Jar

The tomatoes are washed, cleaned, cut and placed on red bricks to dry slowly under the magnificent Calabrian sun. Once ready they are washed in warm water to soften them and immersed for a few minutes in a "hot solution" made of water, salt and vinegar and then drained, seasoned and chopped.

The aubergines are cleaned and cut into perfect slices. They are immersed for a few minutes in a "cold solution" composed of water, extra virgin olive oil, wine vinegar, salt and spices that flavors everything. Then they are drained and roasted before being chopped.

The two chopped ingredients are mixed together with extra virgin olive oil, mint and spices and heated to release all the aromas and blend them together better, before being placed in jars.

Abbinamento consigliato

Ideal to pair with mature and semi-mature cheeses. Excellent to spread on hot croutons or bread and as a base for sandwiches. Perfect to accompany grilled and braised meats. Diluted with a spoonful of extra virgin olive oil it becomes a tasty sauce to sauté short pasta in the pan.
