Imagine the classic mustard: now it has a whole new look. Our original reinterpretation features sweet tones to keep up with modernity while remaining faithful to tradition and craftsmanship: balsamic vinegar combines the flavor of clementines with that of mustard, giving a sweet and delicate mustard.
Clementine Mustard: From the Field to the Jar
First we pick the clementines from our trees and bring them directly to the company. Within just 2 hours of picking, they are washed, peeled, chopped and all the seeds removed. The peel is not thrown away but boiled in water and also chopped. Lemon juice is added to the mixture and the cooking takes place, slowly and in the traditional way. We add sugar only at the end of cooking to avoid browning or crystallization. As soon as the jam is ready, we mix it with balsamic vinegar and mustard, heating everything to perfectly blend the flavors.

Created to pair with mature and semi-mature cheeses, it is also excellent spread on bread or hot croutons or to flavour sandwiches and rolls.
