Green Moringa Lasagna with Mushrooms and Bechamel

Tired of the classic green lasagna? Just add a few grams of moringa flour to your dough and the result will be more than exceptional! Then the combination with mushrooms and béchamel makes everything even better.

Ingredients (for 6 people)

For the lasagna

  • 180 g of 00 flour
  • 20g moringa flour
  • 2 medium eggs
  • a few spinach leaves

For the béchamel sauce

  • 1 l of whole milk
  • 100 g of 00 flour
  • 100 g of butter
  • pepper, nutmeg, salt to taste

For the mushrooms

  • 600 g of mushrooms (the ones you prefer)
  • parsley, salt, pepper, extra virgin olive oil to taste

Preparation

  1. Let's start with the dough. Pour the 00 flour and the moringa flour into a bowl. In another bowl beat the eggs, add them to the flour and start kneading.
  2. Now transfer the dough onto a pastry board and work it until it is smooth, firm and elastic. Wrap it in cling film and let it rest for about an hour outside the fridge.
  3. Meanwhile, prepare the béchamel. Melt the butter in a saucepan, add the flour and make a roux. Now add the previously heated milk, mix and add salt, pepper and nutmeg. Continue mixing until you have reached the desired consistency.
  4. Now let's move on to the mushrooms. Clean them very well, cut them into slices and cook them together with extra virgin olive oil, salt and fresh parsley.
  5. Let's get back to the pasta. Take the dough, divide it in two and start working it (either with the appropriate machine or by hand) until it reaches 2mm thickness. Cut the classic lasagna rectangles and boil them for a minute in lightly salted water. Dry them with a kitchen towel and proceed to compose everything.
  6. Take a baking dish and spread the first layer of bechamel. Cover it with the green moringa pasta, add more bechamel and finally the mushrooms. Continue like this until the baking dish is full (you can also put a handful of parmesan on top of the mushrooms).
  7. Now bake in a static oven at 180° and cook for about twenty minutes, until a nice crust forms.
