Smoked Caciocavallo takes its name from the traditional drying method , in which the cheeses are hung to dry in pairs, "straddling" a horizontal stick. This cheese is of the stretched curd type and has a semi-hard consistency . Its rind has a smooth and waxy surface, while the paste is homogeneous, tender and elastic, without holes. Smoked Caciocavallo is characterized by a delicate aroma and a sweet flavor, enriched by notes of smokiness .
Smoked Caciocavallo differs from our classic Caciocavallo due to the smoking process which gives interesting nuances of flavour to the cheese, making it, depending on the taste of the taster, richer and more interesting for the palate.

Excellent eaten natural or combined with mustards or jams. Delicious eaten with fresh and seasoned cured meats. Ideal for enhancing the flavor of sandwiches, rice or pasta salads. It can be used for many first courses, from soups to risottos.
