This version of our vegetarian lasagna with our tomato and moringa sauce is accompanied by the Cream of Cardoncello Mushrooms and our incredible Buffalo Milk Mozzarella . This is a creative and healthy reinterpretation of the classic Italian dish . This recipe combines the nutritional goodness of moringa and Goji Berries with the creaminess of buffalo mozzarella and the delicacy of Cardoncello mushrooms, for a result that surprises the palate while keeping an eye on health .
Ingredients
- 12 sheets of pre-cooked lasagna
- 500ml Tomato and Moringa Sauce
- 250g of Cardoncello Mushroom Cream
- 300g of Buffalo milk mozzarella , sliced
- 100g of Goji Berries
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Fresh basil for garnish

Preparation of Ingredients : Preheat the oven to 180°C. Hydrate the goji berries in warm water for 10 minutes, then drain. Grease a baking tray with a drizzle of extra virgin olive oil.

Lasagna Assembly : Start with a layer of tomato sauce, goji and moringa on the bottom of the pan. Cover with lasagna sheets, followed by a layer of Cardoncello mushroom cream and slices of buffalo mozzarella. Sprinkle a few hydrated goji berries. Repeat the layers until you run out of ingredients, finishing with a final layer of sauce and mozzarella.

Baking : Cover the pan with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for another 10-15 minutes, or until the top is golden brown and bubbly.

Finishing and Serving : Let the lasagna rest for 10 minutes before cutting. Serve hot, garnished with fresh basil leaves for a touch of color and freshness.
