You probably already know tons of recipes for using dried goji, but… How to use fresh goji berries ? Much richer in nutritional properties than the dried ones, these berries have a sweet and vaguely savoury flavour, ideal for both sweet and savoury recipes.
In this article we decided to focus on a savory recipe, so you can try a new and unusual way to use fresh goji berries.
Spicy tomato and fresh goji soup
We know it's summer and a soup isn't exactly the ideal recipe, but this one is perfect even cold!
Ingredients for two people:
- 80 g of goji berries
- 250 g of blanched and then peeled tomatoes
- 450 g of vegetable broth (made on the spot and not with stock cubes is better)
- 1 onion
- Extra virgin olive oil
- 1 small chili pepper
- 1 teaspoon cumin seeds
- a few leaves of lemon basil
Procedure:
- Rinse the fresh goji berries and set them aside for now.
- In the meantime, prepare the vegetable broth (if you have time, do it immediately, otherwise the stock cube is fine).
- In a large enough saucepan, add the extra virgin olive oil, the finely chopped onion, the chopped chili pepper and the cumin seeds. After a few minutes, add the tomatoes cut into small pieces and brown for a few more minutes.
- Now it's time for the broth: add it to the tomatoes and also add the fresh goji berries. Bring to a boil and reduce for about fifteen minutes.
- Add the lemon basil and continue cooking until the soup is thick and creamy.
- Now you have two options: either serve it hot or try it cold.
