By now, you probably know everything about Moringa (if not, feel free to read our article, “The Incredible Properties of Moringa Oleifera”). Perfectly simple and ideal for creating countless recipes, today we want to feature it as a delicious addition to two incredible soups—quick and easy to prepare.
Pea Soup with Moringa
Ingredients
- 1 kg of peas
- Vegetable broth
- 1 white onion
- Extra virgin olive oil, salt, pepper
- 4 tablespoons of Moringa Powder
Preparation
- Start with the onion. Slice it thinly and let it soften in a pan with some oil.
- Meanwhile, prepare the vegetable broth. You can use a stock cube or make it fresh (it tastes better!).
- Once the onion has softened, add the peas, cook for 5 minutes, then pour in the broth. It should cover everything (set aside a bit to adjust the final consistency). Season with salt and pepper.
- When the peas are soft and cooked, use an immersion blender to blend everything into a smooth soup.
- Once the soup is ready, add the Moringa Powder, blend again, and then strain the soup through a sieve.
- Serve and garnish with a drizzle of olive oil and some herb-flavored croutons.
Chickpea and Sesame Soup with Moringa
Ingredients
- 200 g of cooked chickpeas
- 1 onion
- 1 carrot
- 1 celery stalk
- 2 garlic cloves
- Sesame seeds
- Vegetable broth
- 20 g of Moringa Powder
- Salt, pepper, extra virgin olive oil
Preparation
- Finely chop the onion, carrot, and celery. Cook them in a pot with a drizzle of olive oil for 2–3 minutes, then add the chickpeas and cover everything with broth. Simmer for 20 minutes.
- Meanwhile, heat some oil in another pan, add the minced garlic cloves and sesame seeds, and sauté briefly. Add these to the soup.
- Next, add the Moringa Powder to the chickpeas and blend everything with an immersion blender until the soup is smooth and lump-free.
- Serve and enjoy!
