2 perfect soups with the addition of a little Moringa!

By now you should know everything about Moringa (if so, you can read our article “ The incredible properties of Moringa Oleifera ”). Perfect with its simplicity for the preparation of thousands of different recipes, today we want to propose it as an addition to two incredible cream soups, easy and quick to prepare.

Pea Cream Soup with Moringa

Ingredients

  • 1 kg of peas
  • vegetable broth
  • 1 white onion
  • extra virgin olive oil, salt, pepper
  • 4 tablespoons moringa powder

Preparation

  1. Let's start with the onion. Slice it thinly and let it soften in a pan with some oil.
  2. In the meantime, prepare a vegetable broth, which you can make using stock cubes or making it fresh (it tastes better!).
  3. When the onion is wilted, add the peas, cook for 5 minutes and then pour in the broth, which must cover everything (leave a little aside to adjust the final consistency). Season with salt and pepper.
  4. Once the peas are cooked and soft, take an immersion blender and mix everything together to obtain your cream soup.
  5. Once ready, also add the moringa powder , blend a little more and then proceed to filter the cream with a strainer.
  6. Serve and decorate with a drizzle of oil and some herb-flavored croutons.

Chickpea and sesame cream soup with Moringa

Ingredients

  • 200 g of boiled chickpeas
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • 2 cloves of garlic
  • sesame seeds
  • vegetable broth
  • 20g moringa powder
  • salt, pepper, extra virgin olive oil

Preparation

  1. First, finely chop the onion, carrot, and celery. Let them cook in a pan for 2/3 minutes with a drizzle of oil, then add the chickpeas and cover everything with the broth. Cook for 20 minutes.
  2. Meanwhile, heat the oil in another pan, add the two chopped garlic cloves, the sesame seeds and once sautéed, add them to the cream.
  3. Now all that's missing is the moringa powder . Add it to the chickpeas and blend everything with an immersion blender until you get a smooth, lump-free soup.
  4. Now serve and… enjoy your meal!
