A cream with a strong sweet and sour flavour obtained by processing the “Cipolla Rossa di Tropea Calabria PGI”, with its characteristic purple colour and sweet flavour, with sugar and vinegar.

The red onions we use for our cream are grown exclusively in the Tropea area, a city that enjoys the typical climate of the Southern Mediterranean and gives its fruits a unique and delicate flavor. The artisanal processes we use do not alter the properties of these onions in any way, on the contrary, they enhance them and make our cream extremely versatile and suitable for many preparations. The whole thing is made more harmonious thanks to the addition of extra virgin olive oil from "Dolce di Rossano" olives and a mix of selected spices.

Sweet and Sour Cream of Red Onions of Tropea: from the field to the jar

The red onions of Tropea are first peeled, removed and then finely chopped. They are then cooked in an open basin with the addition of sugar, salt, black pepper and bay leaves and, later, wine vinegar. When the chopped mixture is well cooked, everything is put into jars.

It pairs perfectly with mature and semi-mature cheeses, enhancing their flavor without overpowering their aroma. Excellent with boiled or roasted meats, especially pork, game or venison. Tasty on bread and warm croutons.
