Our Caper Thalli in Oil have a delicate and unique taste, very different from traditional capers.

Caper thalli are the final part of the stem, right next to the flower: they are hand-picked from the caper plants that grow wild in the Sibari plain, selecting only the youngest and most tender plants. The thalli then undergo a long process of de-bittering in order to lose their characteristic bitter aftertaste and become very delicate, tasty and tender.

Caper Shoots in Oil: From the Field to the Jar

We select the caper shoots from the best wild caper plants. We bring them to our company, a few steps from the place of collection, we wash them, we clean them carefully, we put them in boiling water and then in tubs of pure water for three days, so as to eliminate the bitter taste typical of this product. Once ready we immerse them for a few minutes in a "hot solution" made of vinegar, salt and water, we drain them and put them in jars, together with extra virgin olive oil "Dolce di Rossano", salt, vinegar, garlic and chilli pepper. The result is a product with a unique, soft and smooth taste.

Abbinamento consigliato

Alone as an appetizer or as an accompaniment for mature cheeses. Excellent for flavoring vegetable salads or cold pasta or rice salads. Perfect with pizza or any type of meat, especially red meat.
